abstract | A low protein cheese-like food having shape retention, processing suitability and texture peculiar to cheese even when the protein content is reduced or zero. Further, the present invention provides a low protein cheese-like food that has a shape retaining property that is excellent in workability such as cutting and processing at room temperature, and that melts well when heated in an oven and can be suitably used for final foods such as pizza. Furthermore, it provides a cheese-like food in which oil separation during heating caused by adding fats and oils in place of cheese is significantly suppressed. A cheese-like food having a low protein content of 10% by mass or less contains the following ingredients: (A) dextrin derived from potato and having a DE of 2-5, (B) one or more selected from the group consisting of carrageenan, agar, deacylated gellan gum and LM pectin, (C) Emulsifier.
