abstract The present invention relates to red yeast rice containing monacolin K which is a cholesterol-lowering substance, rutin which strengthens blood vessels and is effective in lowering blood pressure, and antioxidant which suppresses oxidation of LDL-cholesterol which causes arteriosclerosis. Provided is a buckwheat soba containing monacolin K, rutin, quercetin, and a method for producing the same, using buckwheat that is rich in quercetin, a kind of polyphenol having power. By inoculating and cultivating red potato strains with higher production of monacolin K, which is a cholesterol-lowering substance, on brown oats than in the past, the monacholine K content in red potatoes is increased, Buckwheat red rice bran containing quercetin can be produced.
