abstract [PROBLEMS] To provide a method capable of separating and purifying mimosine, which is a leguminous plant widely distributed in the subtropical region, with high purity and low cost and optical purity useful for quality control of purified mimosine, which can be applied to industrial mass production. To provide an assay method and a method for producing a mimosine derivative useful for producing a mimosine-introduced peptide. A process for producing purified mimosine or an acid addition salt thereof according to the present invention comprises: (1) A process of extracting mimosine by immersing ginnem in water, (2) adding a cation exchange resin to the extract and adsorbing mimosine to the cation exchange resin; (3) a step of eluting mimosine from the cation exchange resin, (4) A step of obtaining crude mimosine crystals from the eluate obtained in step (3), (5) including a step of obtaining mimosine crystals from the crude crystals by a recrystallization method.
