abstract | 【Task】 Provided is a polysaccharide particulate gel-containing aqueous dispersion in which a particulate gel composed of a polysaccharide maintains a particulate form even when heated at a high temperature and is uniformly dispersed in an aqueous medium. [Solution] In the method for producing an aqueous dispersion containing a polysaccharide particulate gel, the step comprising dissolving the polysaccharide in an aqueous medium, comprising the polysaccharide and an aqueous medium, heating the polysaccharide to a temperature higher than the gel transition temperature, and dissolving the polysaccharide in the aqueous medium. A step of cooling the polysaccharide to a gel transition temperature or lower while applying an external force to obtain a particulate polysaccharide, and a step of irradiating an aqueous dispersion containing the particulate polysaccharide with ionizing radiation.
