abstract | The present invention is a stable liquid olein fraction, wherein less than 8.6% of the TAG type of the olein fraction is a component represented by the general formula SMS, and at least 26% of the TAG type of the olein fraction is of the general formula It relates to the olein fraction which is a component represented by SMM (in the above general formula, S represents a saturated fatty acid and M represents a monoene fatty acid). The olein fraction can be obtained by collecting a liquid fraction after subjecting highly saturated sunflower oil having a high oleic acid content to fractionation. The invention also relates to a process for the preparation of a stable liquid olein fraction by low temperature fractionation of highly saturated sunflower oil with a high oleic acid content. |
