abstract | There are limitations to other processing techniques for low acid beverages (i.e., pH above 4.6). Even after such processing, the beverage product must be handled to prevent contamination after processing. However, research suggests that there may still be various types of microorganisms that can survive after these various processing techniques. For this reason, such processing techniques cannot eliminate the potential for corruption. Therefore, it is desirable to overcome at least one of the limitations of the prior art.
