The present invention describes novel yeast extracts, autolytic yeasts and protein hydrolysates containing free asparagine in an amount of 1 mg / g or less. This yeast extract, autolysed yeast or protein hydrolyzate can be advantageously used in the production of process flavors containing acrylamide in amounts of 800 ppb or less.
