More specifically, the present invention relates to the MET3 encoding gene Met3p, a sulfated adenylyl transferase of brewing yeast, in particular by controlling the expression level of the nonScMET3 gene characteristic of brewer's yeast, thereby stabilizing the flavor of the product. The present invention relates to a yeast in which the ability to produce sulfite that contributes to crystallization is controlled, a method for producing alcoholic beverages using the yeast, and the like. |
