titleOfInvention | Oil composition |
abstract | An object of the present invention is to provide an oil and fat composition having excellent flavor and meltability in the mouth and having a high solidification rate. To provide an oil and fat composition capable of producing a fried food using an oil and fat composition that has no stickiness, is less likely to cause oil smearing, and does not cry sugar applied to the surface of the fried food. SOLUTION: A fat and oil A obtained by mixing and transesterifying a fat and oil containing 15% by mass or more of a saturated fatty acid having 18 to 20 carbon atoms as a palm fat and a constituent fatty acid, and a saturated fatty acid having a carbon number of 22 as a constituent fatty acid. A fat and oil composition comprising fat and oil B mixed with an oil and fat containing 15% by mass or more and transesterified, and palm oil and fat C, and having a oleic acid content of 45% by mass or less in the constituent fatty acid composition.
