abstract | The present invention provides an industrial production method for efficiently producing a water-soluble elastin mixture that can be used as a functional food. A water-soluble elastin mixture comprising a water-soluble elastin having a molecular weight of about 40,000 or less and a peptide derived therefrom, wherein the protein content in the mixture is 90% by weight or more based on the burette method, and desmosine and isodesmosine A water-soluble elastin mixture characterized in that the content of is in the range of 1.8 to 4.0% by weight of the total amino acids.
