abstract | The present invention relates to a method for efficiently producing a novel and excellent wine yeast strain having an excellent alcohol-producing ability, and a new and excellent wine yeast strain having an excellent alcohol-producing ability obtained by the producing method. Another object of the present invention is to provide a method for producing an alcoholic beverage using the yeast strain, a method for efficiently producing a new and excellent predetermined yeast strain, and the like. A wine yeast characterized by crossing a parent wine yeast imparted with conjugation ability with a parent shochu yeast imparted with conjugation ability, and selecting a hybrid strain having a high alcohol-producing ability from the hybrid strains.
