abstract | Disclosed is an emulsion containing high-molecular weight oils and fats, in which white turbidity is suppressed and a highly permeable emulsion is provided, and a temperature control medium using the emulsion is provided. The emulsion comprises at least water, fats and oils, an emulsifier, and a saccharide, has a transparent or translucent appearance, and when used as a temperature control medium, the emulsion is solidified by cooling at a predetermined temperature.
