abstract | A storage container for kimchi with enhanced functions of fermentation and ripening, a kimchi ripening method using the same, and kimchi are provided. In a storage container for kimchi, a plurality of locking projections 11 are arranged on the inner wall surface of a main body 10 along the vertical direction and protrude inward. A close contact portion 21a having a flat area that coincides with the inner flat area of the main body 10 and having a plurality of through holes 21 'formed in the outer peripheral portion and the central portion of the upper surface is provided. A fixing member 20 having an outer wall surface that is bent upward integrally from the periphery of the contact portion 21a, and in which an engaging groove 22 ′ into which the engaging protrusion 11 of the main body 10 is fitted is formed on the outer wall surface. The bottom of the contact portion 21a of the fixing member 20 is brought into close contact with the upper surface of the kimchi accommodated in the main body 10, and the locking groove 22 'of the fixing member 20 is fitted into the locking protrusion 11 of the main body 10 step by step and stored during transfer. When the container is tilted to one side, kimchi juice flows into the inside of the fixing member 20 through the through hole 21 ′ of the contact portion 21 a and freely circulates inside the fixing member 20.
