abstract | An object of the present invention is to provide a simple, inexpensive, and safe industrial production method of egg yolk protein that can be practically used as a food, pharmaceutical, and cosmetic material. SOLUTION: (1) A step of adding and mixing egg yolk, water, and a dextrin having a specific molecular weight, (2) A step of separating the mixture into an upper layer and a lower layer by standing for a certain time, and (3) including egg yolk protein. A step of recovering a lower aqueous solution layer containing almost no lipid, (4) a step of producing a specific egg yolk antibody that can be stored for a long period of time by drying the recovered lower layer aqueous solution layer, and an egg yolk water-soluble protein containing them ( 5) a step of removing dextrin from the recovered lower layer aqueous solution layer; (6) a specific egg yolk antibody having a high degree of purification that can be stored for a long time by drying the lower layer aqueous solution layer from which dextrin has been removed; A process for producing a protein is provided.
