abstract |
An object of the present invention is to provide a composition that is easily dispersible in water with a free plant sterol that is hardly soluble in water, thereby enabling use in water-based foods and drinks, and even in foods and drinks that have been added. An object of the present invention is to provide a water-dispersible powdered free plant sterol composition that does not adversely affect the texture and flavor. [Means for solving the problem] The above-mentioned problems are solved by blending a powdery emulsifier and an agar powder having a weight average molecular weight of 60,000 or less into an average particle size of free plant sterol particles by laser light scattering method of 5 μm or less.
