Phosphorylated sugar and method for producing the same |
abstract |
Disclosed are a phosphatase that specifically dephosphorylates a 6-linked phosphate group, a method for producing a 3-linked phosphorylated sugar alcohol, and a method for producing a 6-linked phosphorylated sugar. A phosphatase specifically dephosphorylating a 6-position phosphate group of a 6-position phosphorylated saccharide composed of glucose and consisting only of α-1,4 bonds and having a degree of polymerization of 3-5. And obtained from the Aspergillus niger KU-8 strain or its culture, and the following enzyme chemical properties: (1) optimum pH of action: pH 1.5 to 3.0; (2) pH stability; pH 2 to 10 (3) optimal temperature of action; 60 ° C .; (4) temperature stability: stable to 50 ° C .; and (5) molecular weight: about 66,000 daltons as monomer (by SDS-polyacrylamide gel electrophoresis) A phosphatase. A method for producing a 3-linked phosphorylated saccharide alcohol using this phosphatase, and a method for producing a 6-linked phosphorylated saccharide comprising heating in the presence of an acid.
