The present invention relates to a method for industrially and efficiently producing a glutamic acid compound represented by monatin, which is useful as a production intermediate for sweeteners or pharmaceuticals, etc., a production method for a production intermediate used therefor, and the like. The present invention relates to a method for producing a novel intermediate and an optically active monatin, a method for producing a production intermediate used therefor, a novel intermediate contained therein, and the like. A ketoglutarate compound that is a precursor of a target glutamate compound is produced by condensing a specific pyruvate compound with oxaloacetate or pyruvate by a cross-aldol reaction and, if necessary, performing a decarboxylation reaction. Furthermore, the present invention provides a method for producing a glutamic acid compound represented by monatin (including a salt form thereof) by converting a carbonyl group of the obtained ketoglutaric acid compound into an amino group. Further, from the specific glutaric acid compound having an indolylmethyl group, a diastereomeric salt is formed with a specific optically active amine and one diastereomeric salt is separated, and then an alkoxyimino (or hydroxyimino) group is converted to an amino group. There is also provided a method for producing an optically active monatin by converting into a group and crystallizing the obtained monatin with a mixed solvent of water and an organic solvent. Moreover, the novel intermediate compound obtained by these manufacturing methods is also provided. [Selection figure] None |
