PROBLEM TO BE SOLVED: To suppress the adhesion of a pigment or a dispersant in an ink to a face surface by focusing on a change in the state of ink attached to the face surface, and to suppress a change in the surface characteristics of the face surface, thereby causing an ejection failure. To provide ink-jet ink and the like that suppresses the occurrence of ink. An ink-jet ink containing at least water, a coloring material, a water-soluble organic solvent, and a surfactant, wherein the ink evaporation rate determined by the following formula is in the range of 10% to 40%.
