Provides a method for controlling the formation of an alkali metal salt of fatty acid, that is, soap, and adjusting the content of fatty acid soap in the reaction solution. A fatty acid soap in a reaction solution of the fat and the alcohol that undergoes a transesterification reaction between the fat and oil and a linear or branched alcohol having 1 to 4 carbon atoms in the presence of an alkali metal salt of phosphoric acid.
