abstract | The method of producing α-amylase resistant starch comprises producing the α-amylase resistant starch product by extruding the raw starch at a temperature in the range of about 60-220 ° C. The raw starch may be in the form of an aqueous slurry or paste having a dry solids concentration of at least about 50% by weight. The method can optionally include an additional step of heating the starch product to a temperature of at least about 90 ° C. in the presence of moisture to further increase the α-amylase resistance of the product. |
