An edible composition having increased flavor release and a method for producing the same. An edible composition with enhanced flavor release comprises: (a) a core material containing at least one surfactant; and (b) cellulose, cellulose derivatives, starch, carbohydrates, gums, polyolefins, polyesters. Containing a material selected from wax, vinyl polymer, gelatin, zein, and combinations thereof, and an outer coating encapsulating the core material. The HLB of the encapsulated composition may optionally be about 7 or greater, and may optionally contain a free surfactant. A method for increasing the release of flavor from a gum composition comprises: (a) preparing a chewing gum composition containing a gum base and flavoring; (b) subjecting the gum composition to chewing; (c) Adding a surfactant to the gum composition during chewing.
