abstract | The present invention relates to the discovery that certain human taste receptors in the T2R taste receptor family respond to certain bitter taste ligands, namely acetaminophen, ranitidine, strychnine and denatonium. The invention further identifies ligands that can be used as additives in foods, beverages and pharmaceuticals to modulate the activation of these taste receptors and to modify (block) the bitter taste associated with T2R. It relates to the use of these receptors in the assay. |
