The present invention relates to the identification of genes involved in desaturation of polyunsaturated fatty acids at carbon 6 (ie, “Δ6-desaturase”). In particular, Δ6-desaturase can be used, for example, to convert linoleic acid to α-linolenic acid and α-linolenic acid to stearidonic acid. Polyunsaturated fatty acids produced by using enzymes can be added to other products such as pharmaceutical compositions, nutritional compositions, animal feeds, and cosmetics. |
