abstract | PROBLEM TO BE SOLVED: To provide a solid tea with a selectively reduced caffeine content and a method for producing the same. SOLUTION: A method for producing tea with reduced caffeine content, wherein solid tea is brought into contact with a medium selected from ethanol, water, and a mixture of ethanol and water and heat-treated. A method for producing tea with a reduced caffeine content in which caffeine is distilled off together with the medium, and tea produced by this production method. [Effect] Only caffeine can be efficiently removed, and at the same time, the tea in which the content of amino acids and catechins is maintained at the original level can be provided.
