abstract | An object of the present invention is to provide an economically advantageous production method of an S-position-substituted L-cysteine derivative which is expected to be used as a medicine, a health care medicine or a food additive. When a microorganism that requires L-methionine and L-cysteine for growth is cultured in a fermentation medium, it is added to the fermentation product and fermentation broth by adding an organic compound having a mercapto group to the medium and culturing the microorganism. Provided is a production method in which a significant amount of an S-substituted L-cysteine derivative corresponding to an organic compound having a mercapto group is accumulated and collected.
