abstract | Disclosed is a method for producing a purified tea extract having a low caffeine content, a high non-gallate content of non-polymer catechins and an improved flavor. SOLUTION: After a tea extract is adsorbed on a synthetic adsorbent, a washing liquid is brought into contact with the synthetic adsorbent, and then an eluate is brought into contact with the synthetic adsorbent, so that the non-gallate body ratio as non-polymer catechins is increased.
