abstract |
To provide a means capable of easily enriching γ-aminobutyric acid and efficiently enriching γ-aminobutyric acid for food containing salt. A method for enriching a salt-containing food with γ-aminobutyric acid, wherein the resting cells of lactic acid bacteria are brought into contact with a salt-containing food in the presence of glutamic acid or a salt thereof, and γ-amino is added to the salt-containing food. A γ-aminobutyric acid-enriching agent for foods containing γ-aminobutyric acid-enriched salt obtained by a method for enriching butyric acid and foods containing resting cells of lactic acid bacteria.
