[Solution] Substitution of amino acids in the thermostable ST0452 enzyme protein with UDP-GlcNAc synthesis activity derived from the hyperthermophilic archaeon Sulfolobus tokodaii to obtain a new mutant protein with improved UDP-GlcNAc synthesis activity while maintaining heat resistance, Using this, UDP-GlcNAc is stably synthesized.
