abstract An object of the present invention is to provide a method for producing a coffee beverage that suppresses germination and growth of heat-resistant bacterial spores during heat storage of the coffee beverage and has good emulsion stability over a long period of time. As a result of intensive research, the present inventors have suppressed the germination and growth of heat-resistant bacterial spores during heat storage of coffee beverages by blending polyglycerin palmitic acid ester, and have stable emulsion over a long period of time.
