abstract The present invention provides a method for producing a rice peptide capable of efficiently obtaining a rice peptide. A supernatant obtained by dissolving rice or rice bran in an alkaline solution is neutralized with an acid to recover rice protein, and the obtained rice protein is hydrolyzed with a proteolytic enzyme. Prolamin with a high BCAA content, which is difficult to recover by the conventional method, can be decomposed and recovered. The rice peptide obtained by this method contains abundant BCAA, so it is suitable for enteral nutrition to improve nutritional supplements during poor physical fitness due to intense exercise and insufficient digestive function.
