abstract | PROBLEM TO BE SOLVED: To satisfactorily transfer a food material layer from a transfer sheet to the surface of a filled food, simplify the transfer operation, and stabilize the form of the transferred food. In a food material transfer sheet, a powdery or granular food material layer containing at least one of a seasoning, a flavor, and a pigment as an active ingredient is coated on a heat-resistant substrate via a binder. The base material is a sheet having a three-layer structure in which polyolefin is laminated on both sides of a reinforcing resin as an intermediate layer, and the film thickness of the front and back polyolefin is 30 μm or more. Since the type, combination, or film thickness of the base material is specified, the strength of the transfer sheet is ensured, and deformation can be prevented, so that the food material layer can be successfully transferred to food.
