abstract | A tofu coagulant using a fan cactus capable of producing high quality tofu and a method for producing the same. The present invention relates to a tofu coagulant using a fan fan cactus and a method for producing the same, comprising a step of crushing and mixing the fan fan cactus selected and washed, and adding water to the crushed fan fan cactus. An enzyme reaction process comprising a cellulose decomposition / removal stage in which cellulase is added and reacted, and a starch removal stage in which amylase and amyloglucosidase are sequentially added to and reacted with the extract from which the fiber has been decomposed / removed. After the ethanol-extracted solution, which has been subjected to enzymatic reaction with alcohol and cooled at room temperature, and after stirring the ethanol-extracted extract, the mucilage is precipitated and separated and removed. The removed filtrate is put into a concentrator to remove ethanol and to concentrate at the same time. [Selection] Figure 1 |
