titleOfInvention Process for producing functional nutrition food using brown rice and functional nutrition food obtained thereby
abstract An object of the present invention is to provide brown rice or germinated brown rice containing an amount of minerals required as a nutritional functional food. A nutritional functional food to which a mineral is added is prepared by adding an aqueous solution in which a mineral is dissolved in germinated brown rice that already contains 30% to 40%, which is moisture at the time of germination. At this time, the mineral is completely dissolved in the aqueous solution by adjusting the aqueous solution to pH 3.0 or more and 5.8 or less. The mineral to be added is preferably in the form of an organic acid salt or an inorganic salt. In order to adjust the pH, it is preferable to add an organic acid or phosphoric acid.
