abstract PROBLEM TO BE SOLVED: To provide a novel trypsin and its typical utilization technique that are more reliable than those derived from mammals and can contribute to effective use of resources. The polypeptide according to the present invention has trypsin activity, does not require Ca 2+ , and has an optimum temperature around 50 ° C. This polypeptide is found from the pyloric blindness of the starfish starfish and consists of 264 amino acids, and mature trypsin consists of 237 amino acids. [Selection figure] None
