abstract PROBLEM TO BE SOLVED: To elucidate what physiological action is caused by excessively produced peroxide in the oral cavity at the time of ingestion of peroxide-containing foods and alcoholic beverages or for other reasons, It is desired to suppress the physiological action by erasing and to develop appropriate means for the erasure. Disclosed is a flavor improving composition comprising as an active ingredient a compound capable of reacting with and eliminating the peroxide in the oral cavity by the catalytic action of salivary peroxidase (POD). Maintaining and improving the flavor of alcoholic beverages by drinking this flavor-improving composition when ingesting peroxide-containing foods and alcoholic beverages, or by blending this compound in peroxide-containing foods and alcoholic beverages Is done.
