abstract | A technique for producing xylitol from a carbon source, which is excellent in energy efficiency and has a simple manufacturing process. The present invention provides a method for producing xylitol, characterized in that xylitol is produced from a carbon source by using a fungus of the order Asteraceae. The fungus of the order of the sphagnum mushroom may include a fungus of the species Minamimitake. The carbon source may include xylose.
