abstract | PROBLEM TO BE SOLVED: To provide a method for easily producing a capsinoid in a short time and in a high yield without using a water or alcohol scavenger generated by condensation in a method for producing a capsinoid by esterification using an enzyme. . Further, the present invention provides a method of stably storing the produced capsinoid by purifying the obtained capsinoid under stable conditions. SOLUTION: A vinyl ester represented by the general formula (1) and a hydroxymethylphenol represented by the general formula (2) are condensed in the presence of an enzyme to represent the general formula (3). An ester compound is produced. Further, the fatty acid represented by the general formula (4) is added to the ester compound represented by the general formula (3) for stabilization.
