abstract An object of the present invention is to obtain a bitter juice composition having an aroma which is advantageous for both health and use of flavor by having both a mineral component useful for health contained in bitter juice and a flavor component contained in shiso. A fragrant bitter composition comprising 0.1 to 1 part by weight of shiso oil made from blue shiso as a raw material, as an extract of shiso aroma component, per 100 parts by weight of bitter juice. As an extract of shiso aroma components added to bitter juices that have a wide variety of mineral components and abundantly contained, soy sauce oil, which is a steam distillate with a lot of aroma components, is used and mixed to contain it in the bitter juice. A fragrant bitter composition having both a mineral component useful for health and a flavor component contained in Shiso. [Selection figure] None
