[PROBLEMS] To improve xanthane gum and improve viscosity, gelation, emulsification / dispersion stability, water retention, freezing resistance and texture of a composition containing the modified xanthan gum. Modification is made using xanthan gum having an acetyl group content of 1% or less. Preferably, the modification is performed by heat treatment, and the heat treatment is performed in a powder state at 50 to 150 ° C. for 1 to 360 minutes. Preferably, the heat treatment is performed under reduced pressure, and is performed in an atmosphere with a relative humidity of 40% or less.
