Isoflavone solution and process for producing the same |
abstract |
【Task】 Provided is an isoflavone solution in which isoflavones are dissolved and stabilized at an unprecedented high concentration by a highly versatile method, regardless of complicated methods such as structural transformation. [Solution] It has been found that the solubility of isoflavone in water is significantly improved by dissolving 5% by weight or more of one or more saccharides selected from monosaccharides, oligosaccharides and sugar alcohols together with the isoflavone composition in an aqueous solvent.
