abstract |
An object of the present invention is to provide a method for determining the taste of a grain using the expression level of a gene present in the grain as an index. [Solution] In order to solve the above problems, the inventors of the present application first focused on the transcription amount of a gene expressed in rice mature seed endosperm (rice grain), and the transcription amount in endosperm between good-tasting rice and non-good-tasting rice A large number of genes with differences were selected. From these selected genes, genes that correlate with taste were selected, and a method for comprehensively evaluating taste by cluster analysis using the expression levels of these multiple genes was developed. By this method, a small amount (several grams) of rice sample can be evaluated at a high correlation with the sensory test in a short time simultaneously with multiple specimens.
