abstract The present invention provides a chemically modified starch and a method for producing the same for controlling and / or adjusting blood glucose level and postprandial absorption in mammals. Modified by a process selected from the group consisting of propylene oxide modification, octenyl succinic anhydride modification, acetylation, dextrinization, and combinations thereof, less than 25% in 20 minutes, 30 in 120 minutes Modified starch that achieves a glucose release level of ˜70% and greater than 60% in 240 minutes.
