abstract |
Compositions and methods for water dispersible phytosterols and phytostanols are provided. Plant sterols and plant sterol esters have been found to be drugs that lower cholesterol in human serum. In the present invention, plant sterols and plant stanols are incorporated into water dispersible compositions by complexing hydrophobic lipids with water soluble carbohydrates. The resulting plant sterol-carbohydrate complex is in an aqueous or powder form and is effective in reducing serum cholesterol levels in a human consuming such food without adversely altering the sensory properties of the food Can be easily incorporated into food.
