This molecule accumulates in the medium and is easy to later process into food ingredients such as the finest aromatic flavors. A suitable strain is a natural ilv-3 mutant strain capable of accumulating α-ketobutyrate in the fermentation medium. By adjusting certain media parameters, α-ketobutyrate was accumulated up to 8 g / l media.
