abstract | PROBLEM TO BE SOLVED: To identify an amino acid sequence controlling the activity of starch synthase IIa (SSIIa) which determines the characteristics of plants, particularly rice starch, and to substitute these amino acids with other amino acids. Provides a method for controlling the activity of SSIIa, and a variant of SSIIa therefor. [MEANS FOR SOLVING PROBLEMS] In the present invention, one or more amino acids selected from the group consisting of 88th, 604th, 737th, and 781th of rice starch synthase IIa (SSIIa) are substituted with other amino acids. And a mutant of rice starch synthase IIa (SSIIa) and a DNA encoding the same.
