abstract | PROBLEM TO BE SOLVED: To obtain a sufficient degree of gelatinization by obtaining a uniform moisture distribution even when immersed in water for a short time and steaming, and to obtain a further sufficient degree of gelatinization when steamed again if necessary Therefore, it is possible to omit the steaming at the fermentation site, and to provide a fermentation raw material treatment method and a fermentation method for the treated fermentation raw material that can greatly reduce time and energy. The fermentation raw material is subjected to heat treatment in the presence of water, and then the starch of the fermentation raw material is recrystallized and the moisture of the fermentation raw material is homogenized by holding it at a low temperature for a long time. The above-mentioned purpose can be achieved by performing reheating treatment in the presence of water and further proceeding gelatinization of the starch of the fermentation raw material.
