SOLUTION: A rare sugar D-allose and protein Maillard reaction complex in which the antioxidant activity of the rare sugar D-allose is enhanced by the Maillard reaction. The protein is α-lactalbumin. It is a Maillard reaction complex having the property of improving antioxidant activity against food. A functional material having a high antioxidant action comprising the Maillard reaction complex.
