abstract | An object of the present invention is to provide a garlic odor that smells at the time of eating but can be quickly deodorized after eating, inhibiting or decomposing the production of components with a long residence time in the body, and obtaining a garlic product that does not affect the next day. A deodorizing method is provided. SOLUTION: (1) Deodorization by suppressing, inhibiting or inhibiting allinase by heating and inhibiting, inhibiting or inhibiting the change from alliin to allicin resulting therefrom. (2) Deodorization by binding or inclusion of garlic odor components by mixing polysaccharides having polar groups. (3) Deodorization by binding or inclusion of a garlic odor component and a polysaccharide having a polar group that is coordinated or cross-linked with a polyvalent cation metal element and has a molecular structure densified.
