PROBLEM TO BE SOLVED: To obtain various isomerases by acting on various kinds of rare aldoses and obtaining the most efficient isomerase to produce various kinds of rare ketoses in the rare sugar strategy of Izumoring (Fig. 1). Establish a reaction system that produces sugar. A DNA encoding the protein (a) or (b) below. The above DNA which is L-rhamnose isomerase derived from Pseudomonas stutzerii . A protein consisting of the amino acid sequence shown in SEQ ID NO: 2. A recombinant protein characterized by culturing a host cell containing an expression system capable of expressing the above protein in a medium, and collecting a recombinant protein having L-rhamnose isomerase activity from the obtained culture.
