PROBLEM TO BE SOLVED: To provide a lipid peroxide scavenger capable of eliminating the produced lipid peroxide and removing the adverse effects exerted by the lipid peroxide. The lipid peroxide scavenger of the present invention comprises an electron donating antioxidant that is one or more of ascorbic acid, polyphenols, quercetin, capsaicin, caffeic acid, guaiacol, and propyl gallate, Peroxidase. The lipid peroxide scavenger of the present invention has an excellent lipid peroxide scavenging action as compared with conventional antioxidants and glutathione series by adding it to objects such as foods, cosmetic compositions and pharmaceutical compositions. In addition, by adding to foods and the like, quality deterioration due to lipid peroxide can be suppressed, and storage stability and stability can be improved. [Selection] Figure 1 |
